Le terme sar désigne plusieurs espèces de poissons. En France, il fait référence, en premier lieu, au sar commun (Diplodus sargus). Les genres Diplodus et Polyamblyodon sont exclusivement constitués de sars.
Diplodus is a genus of marine ray-finned fish belonging the family Sparidae, which includes the seabreams and porgies. These fishes are found in the Atlantic Ocean, the Mediterranean Sea and the western Indian Ocean. Taxonomy Diplodus was first formally proposed as a monospecific genus in 1810 by the French naturalist and polymath Constantine Samuel Rafinesque with Sparus annularis as its type species by monotypy.
Diplodus sargus cadenati es una subespecie de peces de la familia Sparidae en el orden de los Perciformes. En Cantabria se le conoce como Jargo, siendo muy pescado muy apreciado por su sabor y calidad. Morfología • Los machos pueden llegar alcanzar los 45 cm de longitud total.
